How to make fluffy fritters that keep their shape

Who doesn't love lush, fragrant pancakes for breakfast ? They are ideal for a quick and tasty dish that goes well with honey, jam or sour cream. To make pancakes light, airy and tender, you should know a few simple cooking tips.

Ingredients for lush pancakes:

  • 250 ml of kefir or yogurt
  • 1 egg
  • 2 tablespoons of sugar
  • 1/2 teaspoon of soda
  • 200 g of flour
  • a pinch of salt
  • oil for frying

Kefir or yogurt for fritters is best taken at room temperature. This contributes to a faster and better reaction of soda, which will make the fritters as lush as possible.

Mix kefir and soda. Combine kefir with soda in a bowl, leave for 5 minutes. You will see small bubbles forming – this is a sign that the baking soda has started to work.

Add the egg and sugar. Beat the egg, add sugar and a pinch of salt. Mix everything thoroughly.

Add flour. Gradually pour in the flour while mixing the dough. It should be thick, but soft.

Fry the fritters. Heat a frying pan with a little oil. Spoon the batter onto the pan and fry the fritters over medium heat until golden brown on both sides.

Do not flip the fritters until you see bubbles on the surface – this is a sign that they are ready to be flipped. The shape will be kept and the taste will be incomparable.
