How to make homemade marshmallows from apples and cherries

The history of marshmallow has several variants. According to the first, these sweets have ancient Greek roots. The legend says that they were given to people by the god of the west wind, whose name was Zephyr. According to the second version, the beginning of this confectionery history originates in the East. And the third version says that we enjoy marshmallows thanks to the French. Now the main thing is that anyone who wants to can prepare it at home.

Ingredients

To prepare it you need:

  • apple or cherry puree – 50 g each;
  • sugar – 280 g;
  • egg white – 1 pc.;
  • water – 180 ml;
  • agar-agar – 5 gr..

How to prepare marshmallows

Step-by-step plan cooking will help you get sweet pleasure:

  • To prepare puree, you need to take 150 g of apples and 150 g of cherries. The fruits should be chopped and put to cook on the fire. They should become soft. After cooking, the fruit is crushed with a blender. The finished mixture should be passed through a sieve.
  • 100 g of sugar is added to 100 g of fruit puree. The mixture is boiled on fire until the sugar crystals dissolve. The mass is cooled to room temperature.
  • When the fruit mass is cooled, egg white should be added to it. Everything is whipped with a mixer to a lush foam. It should be stable in consistency.
  • At the next stage, the syrup is boiled. To do this, put water on the fire, add the remaining sugar and agar. The mixture should be stirred periodically. The readiness of the syrup is determined by its color. It should be caramel-colored and viscous.
  • At the same time, syrup is slowly poured into the fruit mass, which must be whipped with a mixer. The whole process should take up to 5 minutes. The mass should stabilize.
  • The finished mixture is transferred to a pastry bag and marshmallows are formed on parchment paper.
  • The marshmallows should dry for 5-12 hours. Sometimes it may take a whole day.
  • The finished marshmallow should be sprinkled with powdered sugar.
