How to make Indian Chutney sauce without vinegar

If you want to add a touch of variety to your usual dishes, take a culinary journey. Try adding an Indian accent to fish or meat dishes with a sauce called “Chutni”. There is no single unified recipe. During its existence, the sauce has become so popular that it has gained international recognition. Each country and region prepares it in its own way. We suggest you prepare one of the following recipes.
Ingredients for preparation
The specified proportions of products yield 1.5 liters of finished sauce:
- fresh tomatoes – 2 kg;
- vegetable oil – 5 tbsp. l.;
- grainy mustard – 1.5 tbsp. l.;
- coriander (ground) – 1.5 tbsp. l.;
- bay leaves – 3 pcs.;
- cloves – 3 pcs.;
- cinnamon – 1 stick;
- starch – ½ tbsp. l.;
- ginger (grated) – 50-80 g;
- salt – ½ tbsp. l.;
- sugar – 3 tbsp. l.
Step-by-step preparation
Tomatoes need to be prepared by removing the skin from them. Make cuts on them and dip them in hot water for 1 minute. The skin will be easy to remove. Grind the tomatoes using a blender or meat grinder.
Pour vegetable oil into a saucepan and put on the fire. As soon as they warm up, add mustard, cloves, coriander, bay leaves, cumin, cinnamon, ginger. All components must be mixed after each new addition of the ingredient.
At the next stage, ground tomatoes are placed in the saucepan. Salt the entire mass and continue to cook for 25-30 minutes. Foam will appear periodically, remove it.
When the sauce is cooked (after 30 minutes), you need to remove the spices that remained intact from it. These are cinnamon and bay leaves. Then add sugar to the sauce and continue to cook for another 5 minutes. Remove the saucepan from the heat and sterilize the jars.
The chutney is poured into jars and rolled up with lids. They should cool down, after which they are stored in a dark and cool place.
The sauce can be added not only to various fish, meat and poultry dishes. It will taste great with rice, couscous, curry. One of the interesting options for use is to mix it with mayonnaise and add it to a burger. Delicious!
