How to make lush pancakes on kefir that do not settle after cooling

A simple recipe for fritters on kefir, with which the dish will be successful even for beginners. Success in making fritters awaits even those who tried to make the dish before, but failed.

Ingredients:

  • kefir (fat content 2.5-3.5%) – 250 ml;
  • water – 40 ml;
  • egg – 1 pc.;
  • flour – 240 g;
  • sugar – 3 Art. l. (or to taste);
  • salt – ½ tsp. (or to taste);
  • soda – ½ tsp.

Step by step preparation

  • Kefir is mixed with water and put on fire. Warm up to 40 degrees. In the process, kefir may begin to curdle. There's nothing wrong with it, it's a natural process.
  • Next, the container is removed from the heat, salt, sugar and egg are added.
  • Then the flour is sifted and mixed. Only after that, soda is poured in and the ingredients are mixed again. The dough turns out thick, does not run off the spoon, but slides.
  • If the kefir is non-acidic, add a little lemon juice to quench the soda.
  • Important: after this, the dough cannot be mixed anymore. This is the secret of truly magnificent fritters.
  • Oil is poured into the pan. Then the dough is spread with a spoon and fried over low heat so that the fritters are fried from the inside.
