- white chocolate 34% – 100 g;
- glucose syrup — 15 g;
- cream 33% — 85 g.
How to prepare
Mango puree with glucose syrup should be brought to a boil. Then add chocolate and grind with a blender.
The next step is to add cream. They should be cold. The blender starts again.
Cover with cling film so that it touches the surface. The ganache should stabilize. To do this, put it in the refrigerator for 10 hours. At the last stage, beat with a mixer to a dense structure. The mango filling is ready.
