How to make mashed potato soup, which is “loved by everyone without exception”

First dishes are an integral part of a healthy diet. Mashed potato soup, which came to us from France, is easily absorbed by the body and is suitable for a dietary lunch or dinner.

What is needed for cooking

The soup recipe includes the following ingredients:

  • potatoes – 1 kg;
  • milk – 1 tbsp. milk;
  • eggs – 2 pcs;
  • onion-leek – 1 stem;
  • butter – 50-70 g;
  • vegetable oil – 1-2 tablespoons;
  • water – 5 tbsp.;
  • fresh greens of your choice;
  • crackers.

How to make mashed potato soup

You need to start by preparing potatoes and onions. If desired, leeks can be replaced with onions. Finely chop it and fry it in vegetable oil until golden. Peel the potatoes and cut them into cubes.

Pour 5 glasses of water into the pan. Add fried onions and potatoes. After boiling, add salt to taste and continue cooking for 25-30 minutes. During this time, heat the milk in another container.

Grind the cooked soup with a blender or rub it through a sieve. Add ½ part of warmed milk to the potato mass.

The second part of milk should be beaten with two yolks. Add the egg-milk mixture to the soup, mix thoroughly. Enter the melted butter here.

The mashed potato soup is ready. Decorate the dish with greens and crispy crackers. Delicious!
