How to make pancakes fluffy without baking soda

Is it possible to make fluffy and airy pancakes without using soda? Yes, and it's easier than it seems! Many housewives don't even realize that the main “helper” in this is the right dough and a few simple tricks.
Ingredients:
- flour – 250 g;
- kefir – 250 ml;
- egg – 1 pc.;
- sugar – 2 tbsp. l.;
- a pinch of salt;
- vegetable oil for frying.
The dough for fluffy pancakes does not require soda if you use room temperature kefir. Due to its natural acidity, the dough becomes light and tender. Beat the egg with sugar and salt, add kefir and gradually add the sifted flour. The consistency should be thick but fluid.
To make the pancakes fluffy, do not mix the dough for too long after adding the flour – excessive activity destroys the air bubbles. Fry in a preheated frying pan with a minimum amount of oil. Spread the dough with a spoon, leaving room for expansion. Cover the pan with a lid – this will help the pancakes rise.
The finished pancakes will be golden and tender. Serve them with sour cream, jam, or honey, and no one will notice that you went without soda.
