Cut several small cabbages into 4-6 parts, blanch in boiling water and drain.
Meanwhile, peel the beetroot. (it is preferable to choose dark burgundy) and cut into circles, 3-5 mm thick.
Put cabbage and beets in a jar or pan, adding peeled garlic cloves, a bay leaf, and black pepper. If you like, add cumin.
Then prepare the brine: add 0.5 cups of table salt to 4 liters of cold water, stir well and pour it over the cabbage.
This brine is enough for 10- liter capacity. And if you make it in three-liter jars, you need less brine.
Put the wick on top and leave it to ferment for 4-5 days at room temperature.
After this time, the pickling will be ready, and you will be able to taste crispy, delicious, red and pink cabbage!
