Pickled pickle is one of the most delicious autumn-winter soups. Today we'll talk about some tricks in preparing a delicious and rich pickle, with small nuances.
Some people don’t like pickled cucumbers because they contain pearl barley. If you are one of those people, replace the pearl barley with rice.
Ingredients:
- Beef or chicken – 800 grams;
- Rice or bulgur – 100 grams;
- Potatoes – 2 – 3 pieces;
- Onion – 1 piece;
- Carrot – 1 piece;
- Salted cucumbers – 2 pieces;
- Brine – 1 cup (optional);
- Salt, pepper, spices – to taste.

Step-by-step cooking with all the nuances
1. Boil the broth. The most delicious broth is made with beef bones, but you can replace them with chicken. The longer the broth is cooked, the tastier the soup will be.
2. Fry the rice until it turns beige in a dry frying pan. If you are cooking with bulgur, you do not need to fry it.
3. Chop the onion and carrot in any way you like and sauté in oil until soft.
4. Peel the potatoes and cut into cubes or strips. Send them to the pot with the broth.
5. Finely chop the cucumbers – into small cubes. If this is a problem for you, grate the cucumbers on a large grater and add them to the vegetables.
6. Add tomato paste to the vegetables with cucumbers. This is the ingredient that is not typical for a regular pickle.
7. Transfer the prepared vegetables to a saucepan, add the fried rice. Let it boil, pour in the broth.
8. All that remains is to salt to taste and add spices and black pepper.
