How to make the “simplest” homemade kvass

Kvass is called a cure for 100 diseases, and its devoted fans appreciate the drink for the coolness it provides on hot summer days. But we are not talking about a store-bought product, but about homemade aromatic kvass, which turns out to be both tasty and healthy.
Ingredients:
- rye bread – 400 g;
- raisins – 100 g;
- fresh yeast – 10 g;
- sugar – 150 g;
- water – 4 l.
You will also need a 3-liter jar with a lid, an enameled or glass container with a volume of 5 l, and bottles for storage.
How to cook
- The bread is cut into small pieces, placed on a baking sheet and sent to the oven for 20 minutes at a temperature of 160 degrees. You should get fragrant crackers with a golden crust.
- Place the crackers in a 3-liter jar, pour 2 liters of boiling water and leave until completely cooled (about 4-6 hours).
- After cooling, strain the contents of the jar through cheesecloth (fold the cheesecloth into 6-8 layers). Squeeze the soaked crackers, place them back in the jar, pour 2 liters of boiling water and cover with a lid. Infuse for an hour.
- After an hour, strain the contents of the jar and pour them into the container where the bread infusion of the first batch is already located. It is not necessary to drain the sediment. You should get a little less than 4 liters of kvass.
- Then dissolve the yeast in 100 g of bread infusion and pour them into the common container. Then add sugar and raisins. Mix everything well so that the sugar dissolves completely. Leave to infuse at room temperature for 10-12 hours.
- At the final stage, all that remains is to strain the drink, bottle it, and put it in the refrigerator for 4-5 hours. Kvass according to this recipe turns out to be carbonated.
