In winter, it is very convenient to have ready-made seasonings and preparations at hand. They give dishes a rich aroma. The taste becomes rich and expressive. This does not work with dry seasonings. Make a dill sauce that will complement your favorite dishes: soups, salads, snacks, etc. The recipe is available. You only need a little dill and a desire to cook.
What you need for cooking
First of all, you need young dill. The sauce is more tender in consistency. If you have large and thick sprigs in your batch of greens, it is better to freeze them for the winter.
Wash the greens thoroughly to remove any dust, sand, or small debris so that nothing gets on your teeth later. Chop the dill with a knife. 2-4 bunches will be enough (depending on the size). In total, you should have a medium bowl of chopped greens. Chop the garlic into small pieces and mix with the dill. Take 6-10 cloves. Focus on your taste.
Add the zest of one lemon to the dill. Also squeeze out the juice. Carefully check that the seeds do not fall into the preparation. Over time, they will give a bitter taste, which will ruin everything.
To make the sauce rich, take aromatic vegetable oil. Add salt to your taste. Note that the sauce should be salty, not fresh. Grind the mass with a blender to obtain a homogeneous consistency.
Pour the finished sauce into clean and dry jars, close with lids and store in the refrigerator. You will be provided with a delicious and aromatic dill sauce for the next 3-4 months. Enjoy!
