When preparing this way, be sure to cut the mackerel no more than 5 mm wide. This is so that the quick marinade has time to cook the fish.
Mix 0.5 tbsp. salt, 1 tsp. sugar, 1 tsp. lemon juice or table vinegar, then add 1 tbsp. oil. Pour over the mackerel and rub the pieces well with it.
Wrap in cling film and refrigerate. After 30 minutes, the lightly salted, aromatic mackerel will be ready to eat.
You can use soy sauce instead of salt, and for a spicier and more piquant taste, add lemon pepper.
