How to pickle eggplants deliciously

You will need:
2.5 kg of eggplants
700 g of carrots
500-600 ml of oil
400 g of onion
garlic and salt to taste
celery or other greens
To boil eggplants:
1 liter of water
1 tbsp. l. salt.

Cut the tails off the eggplants and cut them in half, but not all the way.  Boil the water. Water is needed according to the calculation: 1 liter of water and 1 tbsp. l. salt Take as much water as you need. Put the eggplants in boiling water, boil for 10 minutes until they become soft.

Lay them cut side up. Put the wick on them for 2 hours, it is necessary that all the liquid comes out. Fry onions and carrots in all the oil. Leave the roast to cool, add grated garlic, salt and finely chopped greens.

Stuff the eggplants. Wrap them with a thread and put them in a pan. Cover the eggplants with a plate on top and place a wick, or a can of water.

After 2-3 hours, the eggplants will release liquid with oil. Let it ferment for 3-4 days.  Then you can put it in the refrigerator. Delicious!
