How to prepare a marinade for a juicy kebab on kefir
Kefir marinade is one of the most common marinades for shish kebab lovers. Even our grandparents used to make barbecue marinade according to this recipe. The meat marinated according to this recipe turns out to be tender and ruddy.
Necessary products:
- Chicken thighs/wings – 2-3 kg.
- Kefir (32% fat content).
- Onion – 1 kg.
- A bunch of parsley.
- Salt, spices, pepper to taste.
Preparing the marinade:
- The meat should be washed well and wiped with a paper towel.
- Place the chicken in a deep bowl, add onions. Add onion while mixing the meat.
- Pour kefir.
- Add seasoning, salt and don't forget pepper. Spices for barbecue are perfect, but you can use any for meat. You can also add basil or rosemary for flavor. Tip: if you want to get a tanned crust, add turmeric or paprika.
- Add greens, for example, parsley. It is not necessary to finely chop it, otherwise the parsley will burn in the process of cooking the meat.
- We cover our marinade with a plate and leave it to marinate for up to 4 hours. You should not leave the meat in the sun, find a cool place for it.
- String pieces of shish kebab on skewers or lay them out on grills. We take away the remains of onions and greens so that they do not burn and spoil the appearance and taste.
- It takes about 20-30 minutes to fry the chicken until the skin is golden brown.
- We serve the finished dish with greens and fresh vegetables.
