How to prepare a “summer” salad for the winter

I want “summer” salads so much in winter. We offer you a recipe that experienced housewives pass on to each other. Cook until all the vegetables are cooked.
Ingredients:
- eggplant 1 kg
- sweet pepper 0.5 kg
- onion 0.5 kg
- tomatoes 0.5 kg
- oil 200 ml
- salt, pepper, garlic – to taste
- vinegar – 50 ml
In a cauldron or pan with a rough bottom, heat the oil, and then add the eggplants (cut in half lengthwise and sprinkled with salt, garlic and pepper).
Simmer it takes 20 minutes on low heat.
Meanwhile, cut the peppers, unripe tomatoes (hard) and onions into large pieces.
After turning the eggplants over, pour the chopped vegetables on top and simmer for another 25 minutes.< /p>
You need to pour vinegar 2-3 minutes before the end of stewing.
Prepare half-liter jars and roll up the “summer” salad for the winter.
