Real healthy sauerkraut is prepared without vinegar. For acidity, cranberries are added, such cabbage is prepared for several days. There is also a recipe that allows you to try the dish a little earlier than in 3-4 days, if you use lemon.

For preparation you need:
- cabbage – 800-900 g;
- salt – 20 g;
- sugar – 25 g;
- carrot – 50 g ;
- water – 500 ml;
- 1 lemon.
How to cook
For sourdough, you need to choose the juiciest cob, which is finely chopped. You need to grate the carrots and mix the vegetables.
Then you need to rub the shredded cabbage with your hands, after which we squeeze the lemon juice, add it to the bowl with the vegetables and mix.
Now we prepare the brine. . To do this, dissolve sugar and salt in warm water. Pour the brine into the cabbage only after it has cooled down.
Stir the cabbage, cover with a lid and leave it for 30-35 hours.
This will be enough for the cabbage to soak up the marinade and aroma. lemon, and you can already taste it.
The cabbage will be completely ready within 2-3 days. After that, it is stored in the refrigerator or cellar.
Cabbage with lemon goes well with meat, mashed potatoes, porridge and fried fish.
