- red fish (fillet) – 1 kg;
- salt (coarse) – 4 tbsp. l.;
- sugar – 2 tbsp. l.;
- zest of one lemon;
- fresh dill – 20 g;
- cognac – 0.5-1 tbsp. l.
How to cook
Process the fish. It can be pink salmon, salmon, trout. It is more convenient to cook the fillets right away, and medium-sized ones.
Mix the salt and sugar and rub the fish with this mixture.
Do the same with the chopped lemon zest and finely chopped dill.
