If the borscht is a success, the only thing that can ruin it is salt. There are many tricks to save an oversalted dish, but not all of them are suitable for borscht.
Usually, oversalted soups suggest diluting with water or adding some vegetables.
Maybe this trick will work with another dish, but not with borscht. The very idea that it needs to be diluted with water is a mockery of cooking.
There is an option when a bag of rice is placed in an oversalted dish during cooking. At first glance, it doesn't seem like a big deal, but rice has never been part of the classic borscht recipe.
There remains only one trick with raw potatoes, proven by time and chefs.
How to act
If at a crucial stage of cooking you suddenly realize that the borscht is oversalted, then calmly peel one medium potato and send it completely to the pan.
You won't have to do anything else.
While the borscht is cooking, the tuber will absorb excess salt. Potatoes also won't be able to critically affect the taste of the borscht. All that remains is to take out the potatoes after cooking.
If the borscht is already ready, then boil one large tuber (do not salt it!), prepare puree from it directly in the potato broth and send it to the oversalted borscht.
