How to use tops of carrots, beets and radishes

Beet tops

Finely chop a bunch of beetroot leaves, chop a bunch of dill and green onion. Add a couple of eggs, salt, pepper and a couple of spoons of flour. Knead everything well and fry the fritters.

Pie

Blanch 500 g of beet tops. Then cut. Beat a couple of egg whites, adding salt and nutmeg. Put 400 g of ricotta, protein, 80 g of parmesan to the top. Put puff pastry, filling on a sheet, cover with the second part of puff pastry. Cook in the oven for about 30-40 minutes.

Soup

Finely chop the onion, fry. Add grated carrots and saute for a couple of minutes. Place one beet, grated on a large grater, there. Cook for 2-3 minutes. Pour water, add chopped tomato, zucchini, 2 bunches of beet tops, salt and spices. Cook until done and serve with sour cream.

Carrot tops

Carrot tops have a specific taste. Maybe not everyone will like it. But it is not necessary to use it in large quantities. A couple of twigs are enough and the benefits of the body are ensured.

The tops have an antioxidant effect, it slows down the aging process, cleanses the body of impurities, restores the liver, relieves puffiness, and reduces cholesterol.

In addition, this top relieves spasm of blood vessels, strengthens immunity, helps with cystitis, normalizes metabolism. It is also useful for colds.

The top contains vitamins A, E, groups B, D, phytoncides, iodine, selenium, lithium, sulfur, cobalt, aluminum, iron, essential oils.

To neutralize the bitter taste, you can soak the tops in a saline solution. Three tablespoons of salt should be taken per liter of water.

Soup

Cut 4 potatoes, chop 150 g of cabbage, cook for 20 minutes. Add 2 sweet peppers, 3 tomatoes, salt and pepper. Cook for another 10 minutes. Put several sprigs of chopped carrot tops in a saucepan and cook for 5 minutes.

Omelette

Cut half of a sweet pepper, 2 sprigs of carrot tops, a sprig of parsley. Turn everything off a little. Pour in a mixture of eggs, salt and milk. Cook covered for 3 minutes.

Cutlets

Mix 400 g of minced meat, grated onion, chopped parsley, carrot, a couple of cloves of garlic, salt and pepper. Shape into patties and fry or bake in the oven.

It turns out useful and tasty.

Radish tops

Radish tops are even more useful than radishes themselves. It contains almost all B vitamins, as well as vitamins A, C, K, PP, E, iron, fluorine, boron, copper, chromium, zinc, manganese, vanadium, fluorine, nickel, chlorine, magnesium, sodium, sugar, essential oils, organic acids, vegetable protein.

Radish tops increase the elasticity of blood vessels, act as a natural antibiotic, stimulate brain activity, reduce sugar, improve the work of the digestive system, regenerate tissues, and prevent the development of atherosclerosis. And it also helps improve mood.

The tops are used to prepare vegetable soups, fillings for pies, and salads. Here are some recipes.

Salad

Cut 4 radishes, 100 g of basil leaves, 200 g of tops. Blanch the tops for 5 minutes with green beans (you need 200 g). When everything cools down, mix greens and vegetables. Season with a pinch of dry mustard, salt, black pepper and linseed oil. Sprinkle with cheese.

Smoothies

Whip a couple of leaves of tops, an apple, a lettuce leaf, kiwi, parsley and a little apple juice or mineral water.

Soup

Cut 3 pieces of leek, then simmer on low heat in butter. Cut 3 potatoes, combine with onions and cover with water. Cook for 10 minutes. Add spices and salt to taste, 3 bunches of radish leaves (chopped) and cook for 25 minutes. You can add cottage cheese.

Of course, it is best to use young tops. It is more delicate, juicier and tastier.
