Scientists announced their findings in the publication of the Journal of Nutrition. According to them, legumes, such as lentils, can slow down digestion and at the same time slow down the release of sugars contained in starch into the bloodstream – this lowers blood glucose levels.
In the researchers' experiment, people replaced part of their side dish of rice or potatoes on lentils. Scientists recommend doing this to others, especially those who are prone to prediabetes or type 2 diabetes.
“Cereals contain components that inhibit enzymes involved in glucose absorption, and the fiber contained in them can stimulate the production of short-chain fatty acids, and also help lower blood glucose levels,” said the head of the study, Professor Alison Duncan.
