Researchers from Spain tested the effects of this so-called superfood on 9 volunteers over the age of 65 who suffered from prediabetes. This is what is called long-term high blood sugar, which is still not enough to make a full diagnosis of type 2 diabetes.
Volunteers who received meals three times a day had not used quinoa before and preferred potatoes, rice or beans. And now a completely new product was introduced into their diet, which was used both by itself and as an ingredient for making pasta, all kinds of sweets, cookies and even bread. The researchers monitored blood sugar levels.
It was found that quinoa-based products lead to less intense spikes in blood glucose levels after a meal. So, quinoa has a low glycemic index. This is a key factor in preventing type 2 diabetes. It should be noted that doctors recommend that patients with prediabetes choose foods that do not cause sudden spikes in blood sugar, and it is also necessary to pay more attention to sports in order to lose weight.
