Natural meat delicacy in a very simple way

This is a very simple way to prepare the most delicious meat delicacy. Usually, such rolls are marinated for a long time in brine or simply rolled up with spices before cooking. With this method, you don't need to marinate anything beforehand. The result is a natural, incredibly aromatic and delicious roll. Excellent as a meat cut for a mesh table, and for sandwiches.
Ingredients:
- 900 gr. pork (knuckle)
- 1 head of garlic
- 2 pcs. bay leaves
- 2 tsp. peppercorns
- 2 tsp. paprika (sweet ground)
- 2 tsp. spices (mixture for adjika)
- 1 tbsp. salt
Preparation method:
1. Wash the onion peel and put it in a saucepan.
2. Soak the pork knuckle well in water for 2-3 hours, wash it, put it in a saucepan. Add peppercorns (black and allspice), bay leaf, salt, pour water and cook for about 3 hours (add water if necessary).
3. As soon as the bones are well separated from the meat, it is ready. We spread it on a plate. Due to the onion husks, the shank acquires an excellent taste and a beautiful golden color.
4. Pass the garlic through a press, put it in a bowl, add sweet paprika and adjika mixture (it consists of dried herbs, coriander, various peppers and hops-suneli). All these spices can be added separately.
5. Pour broth (5 tbsp. l) into the garlic and spices and mix well.
6. Remove the bones from the shank, cut off a little meat and move it to the narrower part (so the roll will be the same thickness).
7. Rub the shank with the aromatic mixture on both sides and place on a piece of foil.
8. Using foil, carefully roll the shank into a roll, twist the edges of the foil. Wrap the roll in another piece of foil and send it to the refrigerator for at least 5 hours.
9. Cut the finished shank roll and enjoy the taste. Onion husk gives a pleasant taste and excellent color. Due to garlic and spices, the roll turns out incredibly fragrant and tasty.
