Not only from zucchini and eggplant: what other caviar can be prepared

Caviar from tomatoes, carrots and bell peppers for the winter.
This preparation has a bright color, a rich taste and an attractive aroma. It is quickly prepared and just as quickly eaten.
Ingredients
The weight of all vegetables is indicated in their already peeled form.
- Tomatoes – 5 kg
- Carrots – 1 kg
- Vegetable oil – 300 ml
- Red Bulgarian peppers – 1 kg
- Black pepper with peas – 5-6 pieces
- Salt – 2 tbsp. spoons
- Sugar – 4 tbsp. spoons
- Lavrushka – 1–2 leaves
- 9% vinegar – ¹⁄₂ tbsp. spoons
- Garlic – 50 g
Preparation
- Grind tomatoes and carrots through a meat grinder in a saucepan.
- Grind the bell peppers using a meat grinder. Add them to the vegetables along with black pepper, salt, sugar and bay leaf.
- Stir and cook for 20-30 minutes after boiling.
- Crush the garlic. Add to the caviar along with the vinegar. Cook for another 10 minutes.
- Pour the caviar into sterilized jars. Roll, flip and wrap. After cooling, store in a cool place.
< li>Add oil, mix. Bring to a boil and simmer under the lid for about 30 minutes.
