The results of the study, which lasted 23 years, are given on the website of the National Center for Biotechnology Information (National Center for Biotechnology Information). More than 53,000 people took part in it. When the study first began, the average age of the participants was 56 and none had cardiovascular disease.
Scientists found that people who ate nitrate-rich vegetables (leafy greens such as spinach and lettuce ), the risk of cardiovascular disease was 12–26% lower. “Moderate consumption of plant nitrates was associated with a reduced risk of hospitalization for coronary heart disease (by 12%), heart failure (by 15%), ischemic stroke (by 17%), and peripheral artery disease (by 26%),” – scientists noted. .
It adds that the heart benefits may be partly due to the small reduction in blood pressure seen in the study participants.
