Perfect green buckwheat bread

Buckwheat/gluten-free bread is suitable for those who fast and do not eat animal products. It is suitable for those who do not eat gluten. For those who don't eat sugar and yeast.
It has a lot of benefits, and it's also easy to prepare.

We'll take:

• buckwheat flour – 400 g.
• baking powder – 2 tsp (12 g.)
• baking soda – 1/2 tsp
• pinch of salt
• seed mixture – 150 g. (I used pumpkin, sunflower, sesame)
• chia seeds – 50 g.
• water – 250 ml.
• apple puree – 150 gr.
• vegetable milk – 150 ml. (I have rice)
• apple cider vinegar – 2 tbsp. spoons
• sunflower seeds to decorate the bread on top

Meanwhile, turn on and heat the oven to 180 degrees.

Let's start by making our “chia egg”. To do this, pour the seeds with water and let them stand for 5 minutes. During this time, you need to stir them a few times so that the seeds do not form lumps.

Add to the rice milk, vinegar and mix.

Apple puree is prepared simply by steaming the apples and blending them with a blender.

You can also take puree from a baby food jar.

Mix our dry ingredients – these are the first 5 items and mix well.

Let's prepare the mold – mine is a straight silicone one, in the shape of a loaf. I advise you to lightly spray it with oil and line it with parchment – ​​it will be easier to get the bread out!

As soon as the chia seeds turn into a thick putty – add them to the dry ingredients along with plant-based milk and apple puree. Mix well – you will get a thick and sticky dough. Transfer it to the mold, decorate with sunflower seeds on top – lightly press.

Bake for 80 minutes. We take it out and let it stand for 10 minutes. Then we transfer it to a wire rack and here is the most difficult part – you need to give it time to cool completely!

It will be even tastier if you warm the bread in a toaster or toast it in a dry frying pan!
