Pickled cauliflower: crunchy, aromatic and tasty appetizer

Housewives prepare marinated cauliflower very often, because this dish is considered an excellent addition to lunch or dinner. This appetizer will be highly appreciated by those who love pickled vegetables and cauliflower in general.
Ingredients:
- cauliflower – head;
- carrot – 1 root crop;
- sweet pepper – 1 piece;
- garlic – 5 cloves.
For the marinade:
- water – liter;
- sugar – 0.2 kg;
- salt – 2 tablespoons;
- ground coriander – 2 teaspoons;
- sweet paprika – 1 teaspoon;
- ground black pepper;
- hot pepper – ½ teaspoon;
- turmeric – teaspoon;
- vegetable oil – 50 ml;
- vinegar (70%) – tablespoon.
Step-by-step preparation
- The preparation of the appetizer begins with the cabbage being cut into small florets, which are grated on a “Korean” grater. The bell pepper is cut into strips.
- The carrots are grated and the garlic is cut into slices. Then, in any convenient container, the carrots, cabbage, and peppers are laid out in layers and sprinkled with garlic on top. Such layers are formed all the way to the top.
- Pour water into the saucepan, bring the liquid to a boil, then add sugar, salt, coriander, paprika, black and hot pepper, and turmeric. Boil the ingredients until the sugar and salt dissolve.
- Then pour in the oil and vinegar. Stir the contents of the saucepan and remove from heat.
- Pour the vegetables with the hot marinade and wait for the dish to cool. Next, the cauliflower is covered with a lid and sent to marinate in the refrigerator overnight.
- In the cooking process, turmeric plays a special role, giving the dish an unusually bright color. Other spices turn cauliflower into a real work of art.
A fragrant and very tasty appetizer is served with meat, cutlets or any second course. It is prepared for both a regular dinner and a festive table.
