Pumpkin and Apple Pancakes – a Healthy and Simple Quick Dessert

Autumn is a great time to stock up on vitamins. Pumpkin and apple help us with this, and it's a great flavor combination. That's why today we're making pancakes with these products. It turns out very tender, sweet and healthy!

To prepare you will need:

  • 200 g pumpkin
  • 1 apple
  • 200 g kefir
  • 100 g sugar
  • 1 tsp vanilla sugar
  • 2 eggs
  • 150 -200 g flour
  • 1 tsp baking soda
  • a pinch of salt

Preparation:

  1. Cut the pumpkin into small pieces (for convenience), peel and seeds, grate. It is better to use the smallest grater, so the pancakes will be as tender as possible. Immediately grate the apple.
  2. Transfer the mixture into a deep bowl, mix and set aside for now.
  3. In another container, beat the eggs with sugar, vanilla and salt. Pour in the kefir, stir.
  4. Combine the liquid base with the apple-pumpkin mixture. Sift the flour with soda. Knead the dough.
  5. Fry the pancakes under the lid in a frying pan with a sufficient amount of vegetable oil until golden brown. The pancakes rise well during frying.

The dish is ready! Serve with jam or sour cream. Enjoy!
