Pumpkin pancakes that fly off the plate in 5 minutes

Pumpkin pancakes prepared according to this recipe will become a favorite on autumn days. Try it, because it is so simple and incredibly tasty.

Ingredients:

  • 3 eggs
  • 100 g sugar
  • 2 tbsp. oil
  • pinch of salt
  • 150 g pumpkin puree
  • 200 g milk
  • 200 g flour
  • 1.5 tsp baking powder
  • 1/2 tsp. cinnamon

It is advisable that all ingredients for preparation are at room temperature.

Combine the eggs with a pinch of salt and sugar, beat with a mixer until fluffy for 8-10 minutes.

The mass should turn white and double in volume, this is what determines how fluffy your pancakes will be.

Add oil, pumpkin puree and milk to the beaten eggs, mix with a mixer at minimum speed for about 1 minute.

Add dry ingredients: sifted flour, baking powder, cinnamon and mix again with a mixer at low speed for 1 minute.

Bake on a preheated non-stick frying pan without oil. Flip the pancakes when they are still raw on top, but there are already small bubbles, so the pancakes will be fluffy.

Serve them hot, with butter, jam, yogurt or honey. They are very tasty, have a spicy, rich, pumpkin-cinnamon flavor.

Pumpkin puree is prepared in different ways. You can bake the pumpkin and beat it well with a blender, you can steam it, boil it or cook it in the microwave.
