Quick currant pie with summer preparations
If your family loves currants (and you can't help but love them), then we advise you to prepare a pie based on shortcrust pastry with this tasty and healthy berry.
Details
To prepare the dough, we need:
- Flour – 380 g
- Sugar – 100 g
- Salt – 0.5 tsp
- Baking agent – 1 tsp
- Butter – 200 g
- Egg – 1 pc .
For the filling – 1 glass of currant jam or berries, mashed with sugar and 2 tbsp. l. starch
First you need to prepare the shortbread: for this, mix flour, sugar, salt and baking powder in a bowl. Grind the mixture with oil at room temperature (it is enough to take it out of the refrigerator in the evening). Add an egg and knead the dough. Divide it into 2 parts. Put one in the freezer, and the other just in the refrigerator for half an hour.
Mix the jam with starch. Now you can “fold” our cake. Line a 24 cm diameter round mold with parchment and take the dough out of the refrigerator, spreading it with your hands and making 1.5-2 cm sides. The height of the dough is up to 1 cm. Then lay out the currants. Rub the dough from the freezer on top.
Put in a preheated oven to 180 degrees. Bake for half an hour. Take it out when it cools down.
