Reasons why canned cucumbers become cloudy

But not every jar survives the winter. Sometimes home preservation begins to spoil right in the cans. Cucumbers are especially capricious in this regard. Very often, the brine in jars of cucumbers begins to become cloudy, and they become unfit for consumption. Here are the main reasons why this happens.

Ingress of dirt

If the cucumbers were not washed thoroughly enough, it will almost certainly lead to cloudiness of the brine and spoilage of the product. The same applies to aromatic herbs and leaves that are placed in a jar with cucumbers. Cucumbers can also become cloudy due to a poorly washed jar with dirt or detergent left on it.

Poor sterilization

Poorly sterilized jars and lids also cause the brine to become cloudy. Depending on the volume, the cans are sterilized over steam, in an oven or microwave oven. Metal lids are boiled separately.

Unsuitable varieties

The variety of cucumbers is also very important for canning. Smooth store-bought cucumbers, thin or twisted vegetables are categorically not suitable. Small cucumbers with dark blisters will be most suitable. Homemade cucumbers from the market often become cloudy. This suggests that the farmer over-fertilized.

Improper storage

Cucumbers are best stored in a dark and cool place. A cellar, a cold loggia or a storeroom is best suited for these purposes. But at room temperature, they can become cloudy. Therefore, it is necessary to move them to a cool place for storage as soon as possible.
