Recipe for an incredibly delicious apple pie with whipped egg whites

Ingredients for the dough:
4 egg yolks
200 g butter
150 g flour
1 tsp. baking powder
For the filling:
2 kg of apples
150 g of sugar
juice and zest of 1 lemon
4 egg whites
180 g of sugar
Beat the egg yolks with butter, add flour and baking powder, knead the dough. Divide the dough into two unequal parts and wrap in cling film. Put 1/3 in the freezer, and 2/3 in the refrigerator.
Peel and grate the apples and simmer in a pan with sugar,
zest and lemon juice until the moisture has completely evaporated, then cool. Beat 4 egg whites with sugar until thick, stable foam.
Then roll out most of the dough and place it in a mold. Place the apples on top, and half of the smaller dough on the apples. Place the whipped egg white on top of the dough, and the remaining dough on the egg white. Place in the oven, preheated to 180 degrees, and bake for 40-50 minutes. Enjoy!
