Ingredients:
250 g of milk
50 g of fresh yeast
100 g of sugar
100 g of butter
2 eggs
3 yolks
650 g of flour
zest of one lemon
2 tbsp. cognac

Preparation:
In a bowl, add 1 tbsp. l. sugar, 1 tbsp. l. flour and fresh yeast to warm milk. Stir until smooth, cover with a towel and leave to rise in a warm place for 10-15 minutes. After that, pour cognac into the dough, add lemon zest, butter (melted), eggs beaten with sugar.
Mix everything thoroughly. Pour in the flour in parts and knead the dough. Knead for at least 15 minutes. Cover with a towel and leave to rise in a warm place. When the dough has doubled in size, which is about an hour, take and form balls weighing up to 50 g. Flatten the doughnuts in your palm, add the filling and make a donut.
Lay the donuts out so they lie down and rise. Then pour oil into a pan, heat it and fry the donuts. The heat should be less than medium. Turn them in different directions so that they are evenly fried. Place them on paper towels to absorb the oil, and then sprinkle generously with powdered sugar.
