Ingredients for the dough:
125 ml of milk or water
15 g of sugar
5 g of dry yeast
egg
250 g of flour
5 g of salt
35 g of oil
For the filling:
1 kg of potatoes
3 onions
150 g of buckwheat
150 g of water
150 g of lard or oil
salt, pepper
Preparation:
Dissolve the yeast and sugar in the milk, add the egg, mix, add all the other ingredients and knead the dough. Form into a ball and leave to rise until doubled in size.
Cook the buckwheat so that it absorbs water and crumbles. Dice the onion and fry until golden brown (ideally in lard). Boil the potatoes and mash them. Mix all the ingredients for the filling, salt and pepper.
The filling should still be warm. Roll out the dough on a floured surface so that it is 5 cm wider than the baking dish. Place the filling in the center, leaving 5 cm to the edge.
Pull the edges, pinch, and cover with a greased dish on top and turn over. Spread the pie well in the dish, grease with milk, prick the top with a fork and bake at 180 degrees for 1 hour. Delicious!
