“Sauerkraut” in just 3 hours, crispy and delicious

This cabbage is fermented for only three hours and its taste is simply incredible! The salad will definitely become your favorite! I am sure that you will like this sauerkraut very much.
Ingredients:
- cabbage – 4 kg
- carrot – 4 pcs
- onion – 2 pcs
- garlic 3-4 pcs
- salt – 4 tablespoons
- sugar – 250 g
- vegetable oil – 200 ml
- vinegar 9% – 150 ml
- honey – 2 teaspoons
- cranberries, lingonberries – as desired
- water – 1.5 l
Preparation:
First, chop the cabbage. The ingredients are indicated for 4 kilograms of cabbage. If you are going to cook, for example, 2 kg, respectively, reduce all proportions by 2 times.
Now grate 4 carrots on a large grater, finely chop 2 onions, chop 3-4 cloves of garlic (garlic if desired). Now we mix everything, but we do it carefully. Do not press the cabbage hard, it should release juice.
Next we make the marinade. Bring one and a half liters of water to a boil, add 4 tablespoons of salt, 250 g of sugar and 200 g of vegetable oil.
When the salt and sugar dissolve, add 150 g of 9% vinegar. Just be careful! Do not pour it all at once – pour the vinegar a little at a time! Otherwise, the entire marinade will “escape”.
Bring to a boil, but it should not boil for more than 30 seconds. And now pour the hot marinade over the cabbage. Add 2 tsp. l. honey, as well as 2 tbsp. cranberries or lingonberries (if available) and mix everything thoroughly.
After 3 hours, sauerkraut is ready! Be sure to try it, it's delicious!
