Scientists from King's College London have discovered that bread made from chickpea flour lowers blood sugar levels and also keeps you feeling fuller longer.
Chickpeas are a legume. They have learned to make flour from them that preserves the structure of the dietary fiber of whole legumes.
Experiments have shown that bread made from such flour increases the transmission of satiety signals from the intestines to the brain. If the product contains at least 30% chickpea flour, then the blood glucose level is 40% lower compared to the level after eating bread made from white wheat flour.
