Princess Diana, unlike other members of the royal family, was not picky about food. According to longtime royal chef Darren McGrady, the only food she refused to eat was red meat, with the exception of lamb.
At the same time, Diana's former personal chef shared that one one of her favorite dishes was simple tomato mousse. If you haven't tried this dish yet, it's actually ripe tomatoes pureed and served chilled.

This dish is often served as a side dish or as an appetizer during multi-course meals, for example as a canapé on crostini slices or with a light flavored dressing such as truffle oil or orange marmalade.
Some may serve it in a martini glass. However, Princess Diana preferred the savory version of the tomato mousse, which was served with dill and lobster.
In her cookbook “Eating Royally,” McGrady said that Princess Diana's favorite tomato mousse consisted of simple ingredients: tomatoes, vegetable oil, onion, mayonnaise, sour cream, tomato paste, gelatin, and fresh dill.
The royal chef cooled the mousse in separate bowls in the refrigerator, and before serving, carefully separated it from the mold with a knife, put it on plate and served with lemon butter-roasted lobster tail and watercress.
It is said that for Princess Diana, tomato mousse was more than just a unique dish.
