Simple homemade khachapuri recipe

Georgian cuisine is rich and generous, nutritious and very tasty. What is worth only delicate khachapuri. They are so incredible that in 2019 this dish was given the status of an intangible cultural heritage monument. Khachapuri is the soul of Georgia and its culinary calling card.
Khachapuri ingredients
You will need the following ingredients for the dough:
- warm water – 180 ml;
- flour – 300 g;
- sugar – ½ tsp;
- salt – ½ tsp;
- vegetable oil – 1 tbsp;
- yeast (dry) – ½ tsp.
Ingredients for the filling:
- hard cheese – 350 g;
- 2 egg whites;
- water – 1 tbsp;
- flour – 1 tbsp;
- butter – 50 g.
Step-by-step preparation
First, prepare the dough. Dissolve the yeast in warm water. Sift the flour and add salt to it, add the active yeast. Mix all the ingredients. Now add the oil and mix again. The result should be a dough that does not stick to your hands. If it is sticky, add a little flour. Place the dough in a warm place for 30 minutes, cover with a clean kitchen towel or napkin.
While the dough is rising, it's time to prepare the filling. It's ideal if you have suluguni cheese for khachapuri. Grate it and add the egg whites. Mash the ingredients with a potato masher, adding water and flour as well. The consistency should be such that the cheese can easily roll into a layer. Divide it into two parts.
Also divide the dough into two parts. Place one half on a table that should be sprinkled with flour. Roll it out into a circle. The thickness should be 0.5 cm, the diameter is 25 cm. On two edges, parallel to each other, spread a little cheese and form a boat. First, from both sides, start rolling the dough towards the middle, like rolls. Then pinch the ends. You should get a boat with sides.
Line a baking sheet with parchment paper. Place the khachapuri. Place the remaining filling in each khachapuri and brush the dough with egg yolk.
Bake the khachapuri at 200 °C for 15 minutes. 5 minutes before the khachapuri is ready, take them out and put an egg yolk and 2 pieces of butter in the middle. Put them back in the oven for 5-10 minutes. Enjoy!
