Spicy grilled squid with garlic – “shashlik” is not only tasty , but also very useful. And all because squid meat is considered dietary and quite nutritious.

- 4 large squid carcasses
- 1 clove of garlic
- 3–4 sprigs of parsley

STEP-BY-STEP COOKING RECIPE
Step 1
Thaw the squid and remove the chitin plate and the inner stuffing. Pour boiling water over the carcasses and immediately put them in cold water. Carefully remove the skin from the outside and inside. Insert a long wooden spoon or the handle of a spatula into the carcass. With a very sharp knife, make transverse incisions on the squid every 1 cm. The edge of the spoon will not allow you to cut through the carcass completely, and you will get a “harmony”. Remove the spoon, rinse the squid and dry with paper towels.
Step 2
Pass the garlic through a press. Clean the chili from the seeds, finely chop the pod. Squeeze the juice from half a lemon, cut the remaining lemon into slices. Pour olive oil into a bowl, add lemon juice, garlic, chili, salt and pepper and mix. Put the squid in the resulting marinade and turn the carcasses over several times. Leave to marinate for 10 minutes.
Step 3
Heat the grill. Place the squid on the grill and cook for 2-3 minutes. Turn over to the other side and fry for another 2 minutes. Sprinkle the squid with finely chopped parsley and serve hot with lemon wedges and white bread.
