Mackerel is an incredible fish, it is a source of vitamins, minerals and trace elements, it contains omega-3, optimizes metabolism and hormone levels! But the best thing is that it is also incredibly tasty and affordable!
The fish is baked in orange juice combined with mustard, has a pleasant sweet and sour flavor, and turns out very tender and juicy.
This mackerel can be cooked in the oven, on the grill, or on the grill.
INGREDIENTS:
- mackerel – 2 pcs.;
- orange juice – 1 pc.;
- orange zest – 1 tsp.
- olive oil – 1 tsp.;
- dill – 1 small bunch;
- salt to taste;
- plain mustard (mild) – 1 tbsp.

- Defrost the mackerel at room temperature. Cut off the head, tails, fins and remove all the entrails. Also cut the spine from the back, but do not cut the belly. so that the fat does not leak out and remains inside the fish.
It is especially necessary to remove the black film, otherwise the finished dish will be bitter. Rinse under running water and dry a little with paper towels. - Wash the oranges thoroughly with warm water to remove the remnants of the wax that covers them before transportation. Dry with paper towels.
Cut one orange in half and squeeze the juice in any convenient way. Also remove the zest, which we also add to the marinade. - In a bowl with juice, send spices and salt (to taste), add mustard (do not take strong, but gentle/gentle), zest. Mix everything thoroughly – and the marinade is ready.
- Put the fish in the marinade and leave for 30-40 minutes.
- Put the fish on a baking sheet or in a rectangular glass dish and send it to the oven preheated to 180 degrees for 15-20 minutes, no more.
Important: do not overcook the fish in the oven so that there is no specific taste and bitterness of overcooked fat.
