The effect of honey on the body is due to many factors. In particular, the reproduction of bacteria is prevented by its low pH level. It contains a high level of sugar (80%), which absorbs water particles that are vital for bacteria.
However, to preserve its beneficial properties, it should not be added to hot tea or infusion.
Honey is very sensitive to oxidation and heating: the higher the temperature, the stronger the enzymes decompose. “At a temperature above 42°C, all vital activity is destroyed, this applies both to the human body and to useful substances,” said Dr. Albert Becker to Le Figaro. If you dilute honey with hot water, its pH level will change, which will affect its antiseptic properties.
At the same time, hot drinks and honey, taken separately, are very effective in the fight against colds. A drink at a temperature of 37°C to 38°C will increase the expansion of blood vessels in the oral cavity, which provides a large exchange surface.
Thanks to this, the active ingredients contained in honey are better absorbed.
