When a basket of edible, tried-and-tested mushrooms is brought from the forest, try to cook mushroom pate. It can be used for flatbreads, dumplings, pies, sandwiches, pizza… There are many recipes, but this one is incredibly tasty and, indeed, delicate.

Mushrooms must be sorted, discarding without regret spoiled or wormy, clean, wash.
Put in a colander to drain well.
Reheat oil in a pan and pour chopped mushrooms. Fry under the lid, adding chopped onions.
Simmer until ready. At the end, add salt and pepper.
When they cool down, grind them through a meat grinder, put them in bags or other containers you are used to, and send them to the freezer. Take it out to thaw before use.
If you have to use it right away, prepare the dough for pies or dumplings in advance or fry thin pancakes. It tastes good in any version!
