Unprocessed cashews contain the organic oily toxin urushiol. This is a poisonous substance that can cause serious rashes on the skin, and if a person is allergic to it, then a raw nut can lead to death.
However, it is difficult to find cashews in this form – for this you will have to go to the tropics and find a suitable tree. Nuts are exported without the skin, it is removed by heating, and urushiol is removed along with it.
Cashew grows from an apple fruit, which is also eaten. Jam and alcoholic beverages are made from the fleshy, pear-shaped stalk. The apple is not exported to northern countries, as it spoils quickly.
It must be processed locally. When visiting Latin American countries, experts recommend trying an apple drink – “cajuin”. This non-alcoholic product is refreshing and has a pleasant taste. At the same time, in Goa, strong liquor is made from cashew stalks.
