Have you ever tasted a knuckle that literally melts in your mouth, with the light sweetness of the plum sauce? Imagine a dish that combines the rich taste of baked meat with a sweet and sour fruit sauce.
The secret is that the shank is stewed for a long time in its own juice, infused with plums, honey and spices. Wine and plum sauce gives the dish a unique taste that will conquer even the most demanding guests.
Ingredients:
- 1 pork knuckle (1.5-2 kg)
- 500 g of plums
- 3 tablespoons of honey
- 2 tablespoons of soy sauce
- 100 ml of red wine
- 1 onion< /li>
- 4 cloves of garlic
- Salt, pepper to taste
- Bay leaf
Start by preparing the knuckle: thoroughly rub it with salt, pepper and garlic, leave to marinate for several hours so that the meat absorbs all the flavors.
While the shank is marinating, prepare the plum sauce. To do this, remove the pits from the plums, chop them and stew them with onions, soy sauce, honey and red wine. The sauce should thicken and take on a rich taste.
Bake the shank at 180°C for 2-3 hours, periodically basting it with juice and sauce. This technique will help make the meat tender and juicy, and the sauce will become a real highlight of the dish.
