The secret ingredient of cherry jam for even better taste and aroma

Jam from cherries to tea and pancakes – a delicacy that should be in every housewife's home. Among sweet preserves, it is one of the most popular. Ingredients for cherry jam

You can cook with or without bones. Some see them as a special pleasure. Please note that with bones, the duration of storage is significantly reduced – up to one year. They contain hydrocyanic acid, the use of which is considered dangerous for health. So, it is better to spend some time and pick all the seeds from the berries. You will need the following ingredients for jam:

  • 1 kg of cherries;
  • 1.2 kg of sugar;

The first cooking option

First of all, you need to find special dishes. Good if you have a copper basin. As a last resort, let it be enameled. Place pitted cherries in a bowl and add sugar. Leave them to stand for a couple of hours so that a lot of juice is released.

Then you need to add water, put on a slow fire. Wait for the sugar to dissolve. The mass should be periodically stirred and brought to a boil over high heat. Remove from the stove and let it cool completely. In the same way, you need to bring it to a boil twice more. All that remains is to pour the jam into clean, dry jars and roll up the lids. Turn the jars over, cover with a warm, thick towel and wait for even cooling.

Second cooking option

For the second method with the secret ingredient, pour 150 ml of water into a pan and add 5 cherry leaves. Bring to a boil, boil for 15 minutes. The decoction will have an intense smell of leaves, but in order to preserve its concentrated aroma, it needs to stand under the lid for 5-7 hours.

At the second stage, syrup is prepared. For this, leaves are removed from the decoction, sugar is added and boiled for 15 minutes. When the syrup is ready, a cherry and another 3-5 cherry leaves are added to the same dish. In order for the ingredients to exchange flavors and aromas, it takes 10-12 minutes on the fire with occasional stirring. And now you can spread the jam in jars and tightly close the lids.
