Ingredients:
500 g of white fish
300-400 g of fatty fish (trout, pink salmon)
2 onions
2 slices of white bread
100 g of milk
1 egg
1 tbsp. soy sauce
salt, pepper
1 tbsp. oil and butter for frying the onions.

if with cheese:
600 g of white fish
250 g of full-fat sour-milk cheese
with lard:
700 g of white fish
200 g of unsalted lard
Preparation:
Dry the fish with paper towels, chop the onion and fry in oil with butter. Soak the bread in milk. Twist everything through a meat grinder (fish, bread and onion). Add the egg, soy sauce, salt, pepper.
Mix everything thoroughly, cover and refrigerate for an hour. Form cutlets, if desired, roll in breadcrumbs. Fry on both sides until cooked over medium heat. Serve with your favorite side dish or salad. Enjoy!
