The “secret” to making delicious zucchini fritters

Supermarkets are already teeming with ripe vegetables and berries. You can find not only strawberries, but even new potatoes, zucchini, not to mention tomatoes or cucumbers. This means that while the zucchini seedlings are growing in the country, you can relax and cook the healthiest and most delicious pancakes.

It's no secret that the tastiest pancakes are made from young fruits, and garlic and dill are responsible for the taste.

To prepare, you will need:

  • 1-2 zucchini;
  • 2 eggs;
  • 2-3 tbsp. l. flour;
  • 2-3 cloves of garlic;
  • greens, salt and pepper to taste;
  • vegetable oil.

How to cook

You can not peel the young zucchini, but immediately grate it on a fine grater. The finished mass should be salted and left for a while to deal with the other ingredients.

You need to prepare the dill (finely chop), peel and pass through the garlic.

During this time, the zucchini should release juice.

This is the whole secret: in order not to add a lot of flour to the dough, drain the excess juice, throwing the mass into a colander.

Now you can mix the zucchini with herbs and garlic, beat in the eggs, mix and add flour in small portions.

The consistency of the mixture should resemble thick sour cream.

Fry the pancakes in a heated frying pan with oil on each side until a golden crust forms.

Serve hot, with sour cream or your favorite sauce.
