The simplest recipe for a delicious snack is Bulgarian lecho

Recipe for Bulgarian lecho

Wash the prepared tomatoes (1.5 kg) thoroughly under running water, dry, cut into pieces and pass through a meat grinder.

Transfer the resulting mass into a pan and send it to the fire, bring to a boil and cook on low heat for 45-55 minutes, stirring from time to time.

Peel onions and carrots (0.5 kg each). Cut the onion into half rings, and cut the carrot into strips.

Heat a few tablespoons of oil in a pan, reduce the heat and cook the onion and carrot for 15 minutes.

Cut the pepper (1 kg) lengthwise into 3-4 parts and remove the core. Put the peppers in a pot of boiling water for 2 minutes, then drain the water.

Add 50-60 g of vinegar, 100 g of sugar and the same amount of vegetable oil to the tomato mixture. Put peppers and onions with carrots in a saucepan, mix everything thoroughly.

Cook the lecho over medium heat for 20 minutes, not forgetting to stir.

Lay the finished hot lecho into jars immediately and cover with lids. Place in a dark place until it cools completely.
