According to senior doctor Svitlan Shevelyov, yeast is especially valued in light industry due to the absorption of carbohydrates that form ethyl alcohol and carbon dioxide.
For the same reason, bread based on such single-celled mushrooms is recommended to diabetics: microorganisms get rid of simple sugars enough. “Yeast bread based on rye and wheat flour has less effect on increasing GI than others,” the doctor emphasized.
Similarly, it should be eaten by people suffering from problems with the gastrointestinal tract. Thanks to the yeast starter, the production of gastric juice is stimulated, which normalizes the metabolism.
