A dietitian explains how to cook potatoes and what you can eat them with without harming your health. And she started with their beneficial composition.
Potatoes, according to her, are rich in silicon, cobalt, and chromium. The first two elements are also common in other products that grow in the soil, but chromium is not present in all vegetables. In particular, it maintains the sensitivity of cell tissue receptors to insulin and helps to properly use carbohydrates. She noted that potatoes are not harmful for those who are afraid of gaining weight.
Potatoes are especially rich in vitamin C, but during heat treatment, most of the vitamin is destroyed. The product is also rich in potassium. In addition, it contains amino acids, B vitamins, folic and nicotinic acids, trace elements, including calcium, magnesium, zinc, selenium, iodine, as well as natural antioxidants and more.
To preserve nutrients, it is recommended to boil or bake tubers in their skins, and then peel them. You should not eat the skin, because it is from it that the accumulation of the toxic substance solanine begins. The exception is very young small potatoes. But potatoes in fast food are dangerous. Mashed potatoes and fried potatoes are also less beneficial.
Potatoes, the expert explained, are a great side dish for meat or fish dishes, provided that other vegetables are added to them.
