Typical mistakes that spoil the taste of vinaigrette

It would seem that vinaigrette is a simple dish, but at the same time it is fussy, and some typical mistakes can spoil its taste. Autumn is the season to prepare a bright and healthy salad that replaces the side dish, because it contains potatoes, carrots, and legumes (some people add beans, and some add peas).

What are the most common mistakes? ?

  1. Wrong ratio of ingredients. Adding too many potatoes will make the vinaigrette heavy, and too much beetroot will make it too sweet.
  2. Overcooked vegetables. If vegetables are overcooked, they will lose their texture and the salad will be too soft, mushy.
  3. Incorrectly prepared beets. Beets should cook separately so that it does not color the other vegetables before mixing. Cut into cubes, grease with oil and only then add other vegetables.
  4. Excess or lack of salt. Too salty or undersalted dish will lose the balance of taste. Same with vinaigrette. Do not forget that salt will be given by cucumbers (pickled or pickled), so sometimes there is no need to add salt.
  5. Too much oil. The vinaigrette should not be too fatty, so it is worth adding oil to measure, so as not to interrupt the taste of vegetables. If everything “floats” in oil, then no one will like it.
